Chateau Montelena Chardonnay Napa Valley 2005 [併] Poached Sliced Abalone with Prawn Broth 濃湯過橋鮮鮑魚 「食配後感 10/10pts」  “所謂過橋,是透過把濃味而不厚身的蝦湯,輕輕的,快快地,塗在一塊一塊經師傅細膩刀鋒切成薄片的鮑魚上面;過橋這做法令鮑魚片達半熟狀態,令口感保持滑溜,鮮味得以保存。至於在酒的配撘方面,今次我選擇了一支加州Napa Valley已陳年十二個年頭的Chardonnay白酒來應戰。一般來說,加州的白酒比法國的為豐厚,木桶味較顯著;陳年後的加州Chardonnay除了比年青時較為收斂和口感會更醇厚之外,經陳年才有的蜜糖鮮味加上本身較重的酒體來併濃蝦湯可算是沒有最好,只有最好!” Chateau Montelena貴為1976年在巴黎舉行的美法葡萄酒檬瓶大戰(又稱之為巴黎審判 Judgement of Paris)佳麗之一,亦是在11個來自法國,英國和美國的評判給予的分數平均最高的一支酒,順理成章成為當晚白酒組別的大贏家,首度在歷史上為美國酒在世界品酒舞台爭光。不可不提的是當Chateau Montelena的對手也並非善男信女,鼎鼎大名的法國布根地釀酒師Roulot和白酒專家Leflaive出戰的一支,分數也要比下去呢!
