“The saltiness and the umami from the twenty four hours salt-marinated and air dried act on the fish is the main flavour driver here; this semi-matured burgundy now with a slight softened acidity, together with its fair level of cooked fruit and honey type of tertiary flavour, can only counter the unique flavour from the fish fair and square, the missing link is the minerality from the wine, an aged Chablis should do the trick perfectly. ”
