“Not exactly the perfect match but it’s definitely worth a try; the tertiary character from the fully aged Bordeaux seems to match with the liver sausage very well, the hint of acidity from the low fruit level complement well with the dace and the clam sauce, both flavours from wine and the dish pretty much stays intact.”
